Food Coloring Toxicity

Believe it or not, this ube fudge recipe does NOT use food coloring, as I am against it for health reasons.

Let's Talk About Ube...

What is Ube?

Ube, pronounced as “Ooo-beh,” or “Ooo-bay,” is a purple yam that originated in the Philippines. The word “ube” means “tuber, in Tagalog, a native language spoken in the Philippines. 

For this recipe, and many future recipes, I will be using organic ube in powdered form.

What Does Ube Taste Like?

Food gurus across the web describe the flavor of ube as nutty, floral, vanilla-like, and a little sweet. As soon as my ube powder arrived, I opened the bag and tasted it. I agree with the opinions I found across the internet, but I’d like to add:

Ube tastes like a tropical vacation to a small island with a temperate climate and a welcoming vibe. The sunset that kisses the horizon is purple. The starfish in the tidepools are purple. The king-sized bedspread in the luxury condo is purple. The Egyptian cotton towels – well, everything is deliciously purple.

What is Ube Fudge?

There are a few ube fudge variations, but this recipe is made with white chocolate, so you can think of it as white chocolate fudge with an exotic flavor, thanks to the ube!

Where to Buy Organic Ube Powder?

You can buy ube powder from various websites, but if you want to make the best ube fudge, you’ll need to use quality organic ube powder like this brand I found on Amazon!

Ube Fudge Recipe

As I say in every post – always use organic or non-GMO ingredients with no unnecessary chemical preservatives!

Ingredients

  • 2 cups white chocolate chips (divided in half)
  • 1 14-ounce can of condensed, sweetened milk (divided in half)
  • 1/4 cup unsalted butter (divided in half)
  • 1 tbs ube powder (not divided)

How to Make Ube Fudge

  1. Place half of the white chocolate chips, half of the condensed milk, and half of the butter in a stainless steel pot.
  2. Place the other half of the white chocolate chips, condensed milk, and butter in another stainless pot. Add all of the ube powder to one of the pots.
  3. Heat both pots on medium-low heat, (I used setting 2), and stir both pots with separate spoons until the ingredients are melted. One pot will have white fudge, and the other will have purple fudge as seen in the picture below. 
  4. Keep heating and stirring for about 3 to 5 more minutes. ***This was my first time making fudge! I have heard that cooking times make a big difference when making fudge, so if you are a fudge expert, you can play with the cooking times to your liking!***
  5. Remove the pans from the heat.
  6. Grease a 9″ x 5″ glass or stainless steel pan with butter. (Pan size can vary, but don’t go bigger than this.)
  7. Pour the Purple fudge into the pan first.
  8. Then pour most of the white fudge onto the purple, but save about 2 to 3 tbs to draw the final hearts. Mix the colors to your liking by making marbled designs! Don’t overmix if you want to keep the swirls of color separate.
  9. Use the last bit of white chocolate fudge to make hearts by using a spoon to drizzle it into designs. You can drag a spoon, fork, or knife to create the shapes you want!
  10. Allow the fudge to cool on the counter, until the pan is no longer hot. 
  11. Place the fudge in the refrigerator for at least 24 hours to achieve a fudge-like consistency. ***If you take it out sooner, the fudge may have the texture of taffy! As I said, this was my first time making fudge, and I thought I failed because I tried to eat it before it had a chance to chill thoroughly!***
Ube Fudge Recipe
Divide all of the ingredients in half except for the ube powder, which will go in one mixing bowl (or cooking pan). I mixed the ingredients in a bowl first, but you can put them directly into the cooking pots to save dishes.
Valentine's Day Dessert
Heat the pans on medium-low heat, (I used setting 2) for about 3 to 5 minutes. Stir often with separate spoons.
Ube Fudge Recipe
Pour the purple fudge in first. Then pour most of the white fudge on top, but save a few tablespoons to draw the final hearts. This is how your fudge will look before you mix and blend the colors. Look how purple it is!
Ube Fudge Recipe
Draw the final hearts with the remaining white fudge. Let it cool on the counter. Then set it in the fridge to chill for 24 hours.
