Ski Queen Brown Cheese Fudge

OK, hear me out. In a previous post, I described the flavor of Ski Queen brown cheese as tasting similar to caramel, so I started experimenting with different recipes. One of my favorite discoveries was Ski Queen “caramel” hot chocolate! I invented Ski Queen brown cheese fudge this week, and I am so excited to share this indulgent delight with you!

Ingredients

  • 1 – 8.8 ounce block of Ski Queen brown cheese
  • 1 – 7.4 ounce can of sweetened condensed coconut milk
  • 1/4 cup of unsalted butter 

Where to Buy Ski Queen Brown Cheese

You can buy Ski Queen brown cheese at most fancy grocery stores that have a good cheese selection. You can also find it online at Amazon and other websites, but I don’t recommend doing that because it is an item that requires refrigeration, which means it will probably ship to your house in a disposable Styrofoam container, which would make me sad. 

According to Colgate University, Styrofoam is non-biodegradable and non-recyclable, takes 500 years to decompose, and cannot be recycled.

Ski Queen Brown Cheese Fudge

How to Make Ski Queen Brown Cheese Fudge

  1. Melt the butter and condensed, sweetened coconut milk in a medium-sized pot on medium-low heat. I used setting 2.
  2. While the butter and coconut milk are melting, grate the entire block of Ski Queen cheese.
  3. When the butter and condensed coconut milk are fully melted, slowly whisk in the Ski Queen cheese, a little bit at a time, allowing the cheese to melt before adding more.
  4. When all of the cheese has been added, continue to cook and slowly whisk on medium-low heat for about 5 to 10 minutes. There should be no lumps in the fudge.
  5. Remove the fudge from heat and grease an 8 x 8 glass pan with butter. 
  6. Pour the warm fudge into the pan and allow it to cool to room temperature on the counter.
  7. Place the fudge in the refrigerator for 24 hours. It takes 24 hours for the fudge to reach a thick consistency! Even then, it is a soft fudge.
