Pandan Mocktail

Cheers to good health this St. Patrick’s Day with a delicious pandan mocktail!

I’m on a mission to prove that colorful mocktails can be made without artificial dyes. According to the National Library of Medicine, “All of the nine currently US-approved dyes raise health concerns of varying degrees. Red 3 causes cancer in animals, and there is evidence that several other dyes also are carcinogenic.”

Just like butterflies are attracted to vibrant flowers, humans are attracted to flamboyant foods. It’s a natural sensory response. Unfortunately, synthetic dyes aren’t natural, and they aren’t safe.

Seen and Green is committed to helping you have fun in the kitchen without consuming unnecessary ingredients that may cause cancer.

Pandan Mocktail

What is Pandan Powder?

Pandan powder is made from pandan leaves that grow in Southeast Asia. Quality pandan is made from organic sun-dried leaves that are ground into a powder. Pandan has an herbal flavor with a hint of sweet vanilla.

Where to Buy Pandan Powder

You can buy pandan powder on Amazon.com in 4-ounce options or 16-ounce options. I recommend this Blue Orchid Brand because it is organic, which means it was grown to the highest standards, without herbicides or pesticides.

How to Make a Pandan Mocktail

Ingredients

  • 1/2 cup pineapple juice
  • 1/4 cup lime juice
  • 1 tsp pandan powder
  • Liquid Death unflavored sparkle water
  • Coconut sugar for the rim
  • 7 mint leaves – or you can choose your lucky number instead!
  • Cucumber garnish

Mix!

  1. Freeze your favorite mocktail glass. I like to use a pint glass.
  2. Cut a slice of cucumber into the shape of a clover. (This may take a little practice to get it right!)
  3. While that glass is freezing, mix the pineapple and lime juices into a separate glass.
  4. Add the pandan powder and stir with a spoon to mix it well.
  5. Take the frozen glass from the freezer and dip the rim into some coconut sugar to create a sugar rim.
  6. Pour the pineapple, lime, and pandan mix into the frozen glass.
  7. Add some mint leaves, ice, more mint leaves, and more ice, to create a layered effect. (Otherwise, all of the mint leaves will float)
  8. Add enough Liquid Death sparkle water to top off the mocktail.
  9. Garnish the glass with the clover-shaped cucumber slice!
