Savor the flavor of the sunset sans alcohol with this healthy and refreshing electric peach mocktail!

I’ve always described that gorgeous peach sunset hue as “electric peach.” The color inspired me to create this drink.

Electric Peach Mocktail

Ingredients

If you want to make the best electric peach mocktail, you’ve got to use quality ingredients. Choose organic or non-GMO whenever possible, and avoid unnecessary chemical preservatives. Pictured below are some of my favorite brands.

Below are the measurements to make one, pint glass serving.

  • 1/4 cup pineapple juice (can come from a can of pineapples or you can buy pineapple juice.)
  • 2 tbs agave nectar
  • small amount of coconut sugar for dressing the rim of the glass
  • 1 cup peach flavored kombucha
  • 2 tsp beet juice
  • 1 slice of pineapple for garnish

How to Make an Electric Peach Mocktail

  1. Frost a pint glass in the freezer.
  2. While that glass is frosting, use another glass to mix the pineapple juice with the agave nectar. Stir it well.
  3.  Take the frozen glass out of the freezer and dip the top of it in pineapple juice, or use a pineapple slice to moisturize the top of the glass. 
  4. Then, dip the top of the glass in the coconut sugar to make an attractive and sweet sugar rim.
  5. Fill the glass with ice and pour the kombucha on top of the ice.
  6. Slowly and gently pour the pineapple juice on top of the kombucha. 
  7. Slowly and gently drizzle the beet juice on top of the ice. To get a beautiful layered effect, do not mix the beet juice into the drink! Instead, let it rest on top of the drink.
  8. Garnish with a slice of pineapple or peach and enjoy with a reusable straw!

Super Healthy Secret Ingredient Option

For a super healthy secret ingredient option, try adding 1/4 of a teaspoon or less of organic goldenseal root powder. But, beware! If you’ve never tried goldenseal root powder before, you’re in for a shock. I’m not going to lie to you and tell you it tastes good because it doesn’t. It’s extremely bitter.

Why would I suggest adding goldenseal root powder to this mocktail if it tastes so bad? Because goldenseal is good for sinus infections. 

Also, because a mocktail is mocking a cocktail. Cocktails have alcohol in them, and alcohol is horribly bitter on its own, which is why cocktails exist – to drown the bitterness of alcohol. So, when I was thinking of healthy ways to give a mocktail a bitter bite, goldenseal root powder was the first idea to come to mind.

Goldenseal root has been used for centuries as a medicinal plant for a variety of illnesses including sinus infections. Although I couldn’t find scientific evidence that supports the claim that goldenseal root powder has healing properties, I have noticed it cures my sinus infections quickly and effectively, and that’s all the evidence I need.

It also makes me feel energized like I can feel my immune system ramping up! That’s what I love about mocktails. They boost my immune system, whereas a cocktail would tear it down.
