Recently I traveled from Texas through Canada, and all the way up to Alaska to settle into my new home. Camping alone along the Alcan Highway was a magical experience, and I plan to go back someday! Unfortunately, my home wasn’t finished when I arrived, so I continued camping in my yard for a couple of weeks. “Bathing” outside with buckets of warmed fire water to the eerie songs of wolves in distant mountains was like the most lovely dream. However, not having a refrigerator was less than than ideal, especially since I am an all-organic eater who requires home cooked meals to thrive. Luckily, dandelions grow like crazy in Alaska and dandelion salad benefits are numerous!
Dandelion Salad Benefits
Don’t ask me why people consider dandelions to be a weed that needs to be eradicated with toxic chemical herbicides. People are strange… Dandelions are extremely beneficial to the environment. Bees love them. Bears love them. And, people should love them too, because dandelion salads are amazing!
***Note: When foraging for dandelions, make sure you know that they weren’t sprayed with poisons like herbicides or pesticides.***
